3D-Coat v3.01 added a new setting for the Curve tool to the voxel toolset called "Run Brush Along Curve". This setting allows you to take a currently placed spline curve in your scene to use as an extrusion or indentation on the surface of a volumetric object while using a precise distance for the operation.
3D-Coat v3.01 added a new tool to the voxel toolset called the Sketch tool. This tool lets you import 2 or 3 images as reference planes, and then the application will extrapolate a volumetric object based on those images. It's great for creating a quick base volume for sculpting, or for things like greebles & nurnies.
This video covers the new Muscles Tool, which is new n v3.1. The muscles tool allows you to place muscular shaped volume onto an existing volume on a current or another layer. It's also great for creating hair, grass, and other such objects.
With 3D-Coat v3.1, the UV editing tools have undergone a huge change! You can now fully edit your UVs with multiple unwrapping methods, such as ABF++ and LSCM. You can also brush smooth your UVs and further tweak them in quite a number of ways. I go into a good amount of detail on the basics of the new UV tools in 3D-Coat v3.2 in this video.

I cover how to bake textures after using the Ptex UV/Texturing method, to a mesh with an existing UV map. Quite handy if you want to use the Ptex format in 3D-Coat as a "storage" format with your high res details, and bake to lower resolution textures as needed.
